How to make meatless stuffed peppers

These pepper are similar to usual stuffed peppers with rice, only in them there is no meat. Instead of it we will add squash to a stuffing.

It is required to you

  • 2 big paprikas
  • 60 g of brown rice
  • Half of an average squash
  • 4 green and 4 black olives
  • 100 g of feta cheese
  • 2 garlic gloves
  • 1 bulb
  • 250 ml of vegetable broth
  • Greens
  • For sauce:
  • 4 tomatoes
  • 1 bulb
  • Basil
  • Little vegetable broth or tomato juice

Instruction

1. Rice is boiled. We wash pepper, we cut on halves, we remove a fruit stem and we clean from sunflower seeds. We boil water in a pan, we salt it and we blanch pepper about 5 minutes.

2. Small we cut onions and we fry in a frying pan to translucency. We add small cut squash and the garlic which is passed via the garlic press. We extinguish a couple of minutes.

3. We mix the boiled rice, the fried vegetables small cut some olive, greens and a half of the grated feta cheese. We fill with mix pepper and from above we strew with the remained half of cheese. We put them in ware for roasting. We pour vegetable broth there and we put everything in the warmed oven. We bake pepper at a temperature of 200 degrees about 20 minutes.

4. Meanwhile we do tomato sauce. We put tomatoes in boiled water on a couple of minutes, then we drench with cold water to cool, and we husk with them. We cut tomatoes into cubes. We fry small cut onions, we add to it tomatoes and vegetable broth or tomato juice. We extinguish a couple of minutes. We add spices and small cut basil.

5. We spread ready pepper on plates and we water with tomato sauce. Enjoy your meal!
